Preheat oven to 260 (125C) and line a large baking tray with parchment paper.
In a large mixing bowl combine oats, coconut, pumpkin seeds, sunflower seeds and almond together.
In a small saucepan gentle heat the brown sugar, maple syrup, coconut oil, cinnamon powder and salt whilst stirring gently to combine the mixture until fully melted.
Pour the wet mixture over the dry ingredients and give it a really good mix with your hands for a couple of minutes until all the dry ingredients are coated with the wet mixture.
Spread the mix evenly over the baking tray and place in the oven for 10 minutes. Remove from the oven and using a kitchen spoon give it a good stir to ensure some of the untoasted parts from the bottom of the tray are brought up to the surface. Return to the oven and repeat this process 3 more times, for a total cooking time of 40 minutes.You want all the granola to be nicely toasted.
Remove from the oven and allow the granola mix to cool completely, then add in the apple pieces. Give the granola a good mix, you may need to break it up a little with your hands if there are a few clumps. Transfer mixture to an airtight container in a dry cool place for up to a month.
