Apple Crumble Granola

Servings 9 cups of granola

Ingredients

  • 3 cups rolled oats
  • 1 cup desiccated coconut
  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • 1 cup raw almonds roughly chopped
  • ½ cup brown sugar
  • ½ cup maple syrup
  • 3 tablespoons coconut oil
  • 2 ½ teaspoon cinnamon powder
  • 1 teaspoon salt
  • 1 ½ cup dried apple slices roughly diced

Instructions

  • Preheat oven to 260 (125C) and line a large baking tray with parchment paper.
  • In a large mixing bowl combine oats, coconut, pumpkin seeds, sunflower seeds and almond together.
  • In a small saucepan gentle heat the brown sugar, maple syrup, coconut oil, cinnamon powder and salt whilst stirring gently to combine the mixture until fully melted.
  • Pour the wet mixture over the dry ingredients and give it a really good mix with your hands for a couple of minutes until all the dry ingredients are coated with the wet mixture.
  • Spread the mix evenly over the baking tray and place in the oven for 10 minutes. Remove from the oven and using a kitchen spoon give it a good stir to ensure some of the untoasted parts from the bottom of the tray are brought up to the surface. Return to the oven and repeat this process 3 more times, for a total cooking time of 40 minutes.You want all the granola to be nicely toasted.
  • Remove from the oven and allow the granola mix to cool completely, then add in the apple pieces. Give the granola a good mix, you may need to break it up a little with your hands if there are a few clumps. Transfer mixture to an airtight container in a dry cool place for up to a month.
