Move over mint sauce, there's a new kid on the block. And he is going to change your sauce life forever, let me introduce you to my spectacular Mint and Feta Pesto.
Ok guys, can you believe that in less than 2 weeks Christmas is going to be knocking on our doors!!! I know I can't. And once again I am totally disorganised.
I still haven't bought one present or really even thought about what I'm going to buy people…hello Christmas Eve shopping spree.
I haven't organised what's going to go on the Christmas table yet( way to many options I tell you) the only thing I am certain about is eating THESE and THESE on Christmas morning.
And to this day I still haven't even put my tree up, but as I write this I think it might be time to put that on my to do list today.
But the thing is I love Christmas…it is always such a special and magical time of the year if you can look through all the chaos and stress that it can bring. I love the get togethers with friends and families. The sharing and caring nature that it brings out in all of us. The array of delicious and scrumptious food and cocktails that we all get to share together. And I love the family traditions, new and old, that we all cherish and can't wait to get amongst.
And this year I can't wait to change one of my old family Christmas favourites into a new one. By changing up the bowl of mint sauce that usually sits right next to the perfectly roasted lamb with this snazzy, creamy Mint and Feta Pesto. And you guys should totally follow suit and join me, cause wouldn't it be fun to start a new tradition together friends?
So this Mint and Feta Pesto is a little bit different from your normal oily styled pesto that we all love. It has a creamy texture due to the addition of feta that also replaces the usual Parmesan component in a pesto. Making this pesto like no other.
I have chosen cashews for the nutty part of this pesto. Their neutral taste gives way to the intense minty flavor, from you guessed it, the mint. But if you don't have these on hand I could totally see almonds, walnuts or even sunflower seeds working well as a replacement here. And a good squeeze of lemon gives a nice tangy explosion and adds to the Mediterranean feel of this pesto.
I can see this Mint and Feta Pesto being loved by so many of our favourite foods. I can see it hooking up with a few different dishes on the Christmas table, like that leg of roasted lamb that I mentioned before. As well as the chicken, ham and roasted potatoes.
But let's not forget that Christmas is only one day and I think this pesto can be enjoyed all year round slathered on bagels and sandwiches or just being invited to hang out as a side sauce on an array of different dishes either on a plate or in a bowl. Really the options are endless with a sauce like this.

Ingredients
- 2 cups of mint leaves packed tightly
- ½ cups Feta
- ½ cup cashews
- Juice of a lemon
- Salt and pepper
- ½ cup of olive oil
Instructions
- Place mint, Feta, cashews, lemon juice, salt and pepper into food processor. Blitz for about a minute. Scrape down sides.
- Slowly add olive oil whilst food processor is on until combined.
- Place into an airtight container in the fridge for up to week.
