1. Pineapple, Lime & Coconut Muffins
Every time I make these muffins I fall in love with them a little bit more. Juicy crushed pineapple swirled through the mix gives these muffins its moist texture while the dried coconut adds a bit of crunch, especially the extra sprinkles on the top. And don’t forget the lime, it is subtle but it gives a little bit of zing that just lifts the flavor. Joined together they make a great flavor combination.

2. Pear, Ginger & Chocolate Muffins
The first time I made these muffins I made them with just the ginger and pears, and they were so good that I thought why not throw my favorite ingredient in. So second time round the chocolate chips went into the mix making the muffin taste soooo good. Now if you haven’t tried this flavor combo before then today’s the day.

To this day I have not met anybody that doesn’t like blueberries, I mean what’s not to like? Packed full with vitamins and antioxidants these little guys are not only damn tasty but they are also extremely good for you too. So with this in mind I have added them to this relatively guilt free recipe that any muffin (and of course blueberry) lover will come back to again and again.

Doughnut muffin you ask? Don’t worry this is not some crazy concoction of mine they are just a muffin. I simply call them a doughnut muffin as they remind me of those warm round doughnut that look utterly boring from the outside, but then you bite into them and hot berry jam comes squirting out and then they become amazing. Well that is exactly what happens with these muffins except they are even better because of their scrumptious crumbly topping.
